I use Bluegill for this recipe but you can use any favorite fish. First I start with a glass casserol pan about 9 x 13 (you could use a metal cake pan too) Coat the bottom with butter or no-stick spray. Line filets to cover bottom of dish. Sprinkle with Oregino ( I use quite a bit but its up to your taste ) then sprinkle with salt & pepper. Use one large can of mushrooms and spread them on top of filets. Now slice one or two large onions thin and place on top. The last thing is to put small pats of butter around the top ( i use almost a whole stick for this part) Cover pan with aluminum foil and seal tight. Place in 350 degree oven for 30-45 minutes depending on how thick your filets are. I like to use my grill to make this in the summer time to keep the house from getting to warm. With ice fishing here this is a simple quick and easy recipe. Enjoy!
